Ingredients
- 2 c. self-rising flour
- 2 tsp. oil
- 1 egg
- 2 c. vanilla ice cream
- 1 c. blueberries or strawberries (optional)
Method
- Combine flour, egg, oil and ice cream in bowl.
- Beat until smooth.
- Stir in berries.
- Fill well-greased muffin cups 3/4 full. Bake at 425° for 20 to 25 minutes or until brown.
- Serves 6 to 8.
