Ingredients

  • 6 slices bacon
  • 1 1/2 c. corn meal mix
  • 1/2 c. self-rising flour
  • 1/2 c. chopped onions
  • 1 egg, beaten
  • 1 c. buttermilk
  • vegetable oil

Method

  • Cook bacon until crisp.
  • Drain and crumble.
  • Set aside. Combine cornmeal mix, flour, onion and bacon.
  • Make a well in center of mixture.
  • Add egg, buttermilk and 2 tablespoons bacon drippings.
  • Stir just until moistened.
  • Pour oil into Dutch oven. Heat to 375°.
  • Drop batter by tablespoon into oil.
  • Fry a few at a time, turning once, to golden brown.
  • Drain on paper towels. Serve immediately.
  • Yield: 20 hush puppies.
