Ingredients
- 6 slices bacon
- 1 1/2 c. corn meal mix
- 1/2 c. self-rising flour
- 1/2 c. chopped onions
- 1 egg, beaten
- 1 c. buttermilk
- vegetable oil
Method
- Cook bacon until crisp.
- Drain and crumble.
- Set aside. Combine cornmeal mix, flour, onion and bacon.
- Make a well in center of mixture.
- Add egg, buttermilk and 2 tablespoons bacon drippings.
- Stir just until moistened.
- Pour oil into Dutch oven. Heat to 375°.
- Drop batter by tablespoon into oil.
- Fry a few at a time, turning once, to golden brown.
- Drain on paper towels. Serve immediately.
- Yield: 20 hush puppies.
