Ingredients

  • 6 large zucchini
  • 1 green pepper
  • 1 red pepper
  • 4 large onions
  • 1/2 c. salt
  • ice water to cover
  • 3 c. sugar
  • 2 1/2 c. vinegar
  • 1 c. water
  • 2 tsp. turmeric
  • 2 tsp. celery seed

Method

  • Grind or grate squash, pepper and onions.
  • Mix with salt and ice water to cover vegetables.
  • Let stand 1 hour; drain.
  • Rinse well and drain thoroughly.
  • In saucepan, put sugar, vinegar, water, turmeric and celery seed.
  • Add vegetables and simmer over low heat 10 to 15 minutes.
  • Spoon piping hot into jars and seal. Process 5 minutes in boiling water bath.
  • This relish is sweet and good eating with meat.
  • Makes 10 pints.
