Ingredients
- 6 large zucchini
- 1 green pepper
- 1 red pepper
- 4 large onions
- 1/2 c. salt
- ice water to cover
- 3 c. sugar
- 2 1/2 c. vinegar
- 1 c. water
- 2 tsp. turmeric
- 2 tsp. celery seed
Method
- Grind or grate squash, pepper and onions.
- Mix with salt and ice water to cover vegetables.
- Let stand 1 hour; drain.
- Rinse well and drain thoroughly.
- In saucepan, put sugar, vinegar, water, turmeric and celery seed.
- Add vegetables and simmer over low heat 10 to 15 minutes.
- Spoon piping hot into jars and seal. Process 5 minutes in boiling water bath.
- This relish is sweet and good eating with meat.
- Makes 10 pints.
