Ingredients

  • 2 cups Garbanzo beans from can or cooked from dry beans
  • Juice from 1 or 2 medium lemons
  • 1 garlic clove minced
  • 1-1/2 Tbsp tahini
  • 2 or 3 Tbsp olive oil
  • 2 or 3 Tbsp juice from beans (optional)
  • salt to taste
  • black or white pepper to taste (optional)
  • spices (optional)

Method

  • Put all ingredients into a blender. Pulse on a medium to high speed until blended to a smooth consistency. I like to make it with 2 lemons, 1 garlic clove and 3 Tbsp olive oil. Spice options include cayenne, fresh cilantro, cumin, curry, paprika, fresh parsley and others.
