Ingredients

  • 3 c. all-purpose flour
  • 2 c. sugar
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 3 eggs, beaten
  • 1 1/2 c. oil
  • 1/2 tsp. vanilla
  • 8 oz. crushed pineapple
  • 2 c. pecans
  • 2 c. bananas, mashed

Method

  • Combine dry ingredients in a large bowl.
  • Add eggs and oil. Stir until moistened. Stir in vanilla, pineapple, 1 cup pecans and bananas.
  • Put in three 9-inch pans. Bake at 350° for 25 to 30 minutes.
  • Use Cream Cheese Icing and put 1 cup pecans on top and sides.
