Ingredients

  • 1 peck small tomatoes
  • 3/4 c. sugar
  • 2 Tbsp. pickling salt
  • 2 c. vinegar
  • 1/2 c. lemon juice
  • 1/4 c. Worcestershire sauce
  • 1 Tbsp. prepared mustard
  • 6 to 8 cloves garlic, chopped
  • 1 Tbsp. basil leaves
  • 4 large onions, diced
  • 4 green and/or red bell peppers, diced
  • 8 to 10 hot peppers, diced

Method

  • Peel and quarter tomatoes.
  • Add sugar, salt, vinegar, lemon juice, Worcestershire sauce, mustard, garlic and basil.
  • Bring mixture to a boil and simmer about 2 hours until slightly thickened.
  • Add onions, bell peppers and hot peppers to mixture and return to boil.
  • Taste and add more hot peppers if desired.
  • Pour into hot jars and seal.
  • Makes 8 to 10 pints.
