- 1 peck small tomatoes
- 3/4 c. sugar
- 2 Tbsp. pickling salt
- 2 c. vinegar
- 1/2 c. lemon juice
- 1/4 c. Worcestershire sauce
- 1 Tbsp. prepared mustard
- 6 to 8 cloves garlic, chopped
- 1 Tbsp. basil leaves
- 4 large onions, diced
- 4 green and/or red bell peppers, diced
- 8 to 10 hot peppers, diced
Method
- Peel and quarter tomatoes.
- Add sugar, salt, vinegar, lemon juice, Worcestershire sauce, mustard, garlic and basil.
- Bring mixture to a boil and simmer about 2 hours until slightly thickened.
- Add onions, bell peppers and hot peppers to mixture and return to boil.
- Taste and add more hot peppers if desired.
- Pour into hot jars and seal.
- Makes 8 to 10 pints.
