Ingredients

  • 3 c. peeled Irish potatoes, chopped
  • 3 c. onions, chopped
  • 1 1/2 qt. chicken broth (canned or homemade)
  • salt and pepper to taste
  • 1/2 to 1 c. cream
  • 2 to 3 Tbsp. chives to garnish

Method

  • Put potatoes and onions in pot with chicken broth.
  • Season and bring to a boil.
  • Turn to low, partially cover and simmer until vegetables are tender.
  • Place mixture in small batches in blender and puree.
  • Put back in pot and add butter and cream.
  • Heat thoroughly but do not boil.
  • Garnish with chives.
