Ingredients
- 3 c. peeled Irish potatoes, chopped
- 3 c. onions, chopped
- 1 1/2 qt. chicken broth (canned or homemade)
- salt and pepper to taste
- 1/2 to 1 c. cream
- 2 to 3 Tbsp. chives to garnish
Method
- Put potatoes and onions in pot with chicken broth.
- Season and bring to a boil.
- Turn to low, partially cover and simmer until vegetables are tender.
- Place mixture in small batches in blender and puree.
- Put back in pot and add butter and cream.
- Heat thoroughly but do not boil.
- Garnish with chives.
