Ingredients

  • 2 pints cherry tomatoes, stems removed
  • 3/4 cup soft bread crumbs
  • 1/4 cup plus 2 tablespoons minced onion
  • 1/4 cup plus 2 tablespoons snipped fresh parsley
  • 1 large clove garlic, minced
  • 3/4 teaspoon salt
  • 1/3 teaspoon dried thyme leaves
  • 1/4 teaspoon pepper
  • 1/4 cup plus 2 tablespoons olive oil

Method

  • Heat oven to 400
  • Place tomatoes in single layer in lightly oiled 13x9x2 inch baking dish
  • Combine remaining ingredients except olive oil, sprinkle crumb mixture over tomatoes. Drizzle with oil
  • Bake until tomatoes are puffed, about 6-8 minutes
