Ingredients
- 2 pints cherry tomatoes, stems removed
- 3/4 cup soft bread crumbs
- 1/4 cup plus 2 tablespoons minced onion
- 1/4 cup plus 2 tablespoons snipped fresh parsley
- 1 large clove garlic, minced
- 3/4 teaspoon salt
- 1/3 teaspoon dried thyme leaves
- 1/4 teaspoon pepper
- 1/4 cup plus 2 tablespoons olive oil
Method
- Heat oven to 400
- Place tomatoes in single layer in lightly oiled 13x9x2 inch baking dish
- Combine remaining ingredients except olive oil, sprinkle crumb mixture over tomatoes. Drizzle with oil
- Bake until tomatoes are puffed, about 6-8 minutes
