Ingredients

  • 3 c. cooked chicken
  • 2 c. celery
  • 1/2 c. sliced almonds
  • 1/4 c. pimento (thin slices)
  • 1 c. potato chips, crushed
  • 1 1/4 c. mayonnaise
  • 3 Tbsp. lemon juice
  • 2 Tbsp. green onions
  • salt to taste
  • 1/4 tsp. pepper
  • 1/2 c. grated cheese

Method

  • Toss chicken, celery, almonds, pimento and mayonnaise.
  • Blend in lemon juice, onions and seasonings.
  • Fill a shallow, greased casserole.
  • Mix grated cheese with chips.
  • Sprinkle over top. Bake at 375° about 30 minutes or until heated through and lightly browned.
  • Yields about 8 to 10 servings.
