- 4 (14 1/2 oz.) cans chicken broth
- 2 Tbsp. rice vinegar
- 1 Tbsp. soy sauce
- 1 tsp. sugar
- 1/4 tsp. minced, fresh ginger
- 1/8 tsp. ground red pepper
- 1 lb. crab flavored surimi (imitation crab)
- 1 (8 oz.) can bamboo shoots, drained
- 1/2 c. chopped shitake mushrooms
- 1/4 c. sliced scallions
Method
- Combine first 6 ingredients in a Dutch oven.
- Bring to boil; cover and simmer for 10 minutes or low heat.
- Add surimi, bamboo shoots and mushrooms.
- Simmer until heated through.
- Sprinkle with scallions.
