Ingredients

  • 4 (14 1/2 oz.) cans chicken broth
  • 2 Tbsp. rice vinegar
  • 1 Tbsp. soy sauce
  • 1 tsp. sugar
  • 1/4 tsp. minced, fresh ginger
  • 1/8 tsp. ground red pepper
  • 1 lb. crab flavored surimi (imitation crab)
  • 1 (8 oz.) can bamboo shoots, drained
  • 1/2 c. chopped shitake mushrooms
  • 1/4 c. sliced scallions

Method

  • Combine first 6 ingredients in a Dutch oven.
  • Bring to boil; cover and simmer for 10 minutes or low heat.
  • Add surimi, bamboo shoots and mushrooms.
  • Simmer until heated through.
  • Sprinkle with scallions.
