Ingredients

  • 1 c. all-purpose flour
  • 1/2 c. whole wheat flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 beaten egg
  • 1/2 c. milk
  • 1/2 c. honey
  • 1/4 c. cooking oil
  • 1/2 tsp. finely shredded lemon peel

Method

  • Stir together flour, whole wheat flour, baking powder and salt.
  • Make a well in the center.
  • Combine egg, milk, honey, oil and lemon peel; add all at once to dry ingredients, stirring just until moistened (batter should be lumpy).
  • Grease muffin cups or line with paper baking cups; fill 2/3 full.
  • Bake in a 375° oven about 20 minutes.
  • Makes 12.
