Ingredients

  • 1/2 baguette thinly sliced
  • 1/4 cup olive oil + 2 tbsp
  • 1 pound skinless chicken breast
  • 1 avocado pitted, peeled, chopped
  • 1 head celery thinly sliced
  • 1/2 red onion sliced
  • 1/4 cup cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon whole grain mustard

Method

  • Preheat oven to 350°F. Arrange bread in single layer on a baking sheet. Drizzle with 1 tbsp oil and season. Bake for 6-8 mins, until crisp and golden.
  • Meanwhile, heat grill pan over medium heat. Brush chicken with 1 tbsp oil and season to taste. Cook for 5-6 mins per side, until cooked through. Let rest for 5 mins. Slice thinly.
  • Combine avocado, celery and onion. Whisk remaining ingredients together. Season then toss with salad. Serve topped with chicken and croutons.
