Ingredients

  • 1 pound fresh Brussels sprouts, trimmed and shredded
  • 2 medium tart apples, chopped
  • 1 medium red onion, chopped
  • 1 small sweet orange pepper, chopped
  • 1/2 cup chopped walnuts
  • 1/2 cup green grapes, sliced
  • 1/2 cup shredded cheddar cheese
  • 3 bacon strips, cooked and crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons honey mustard
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Method

  • In a large bowl, combine the first 8 ingredients. In a small bowl, whisk remaining ingredients. Pour over salad; toss to coat.
