Ingredients
- 1/3 cup Butter, softened
- 1/3 cup Granulated Sugar
- 1 Large Egg
- 2/3 cup Honey (I prefer to use orange blossom or wild flower. But blackberry honey is delicious too.)
- 1 teaspoon Lemon Extract
- 2 3/4 cups All Purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
Method
- Cream butter and sugar until it's light and fluffy. Add honey, egg and extract. Sift dry ingredients together, mix well.
- Cover and chill the dough about 1 hour.
- Pre heat oven to 375° F.
- on a lightly floured board, roll dough out 1/4 inch thick. Cut into desired shapes with cookie cutters. Place on a parchment lined cookie sheet, and sprinkle with colored sugar.
- Bake 8 - 10 minutes or until no imprint remains when lightly touched. All cookies continue to cook as they cool. These are supposed to be just set and tender.
- * * People are reluctant to try these, because they look like ho hum sugar cookies. However, once they try them, these cookies don't stick around very long.
- If you would like to make these 3 dimensional: Cut a vertical slit between two points on each star to just above the center; spread dough apart to form a 1/4-in. opening. Assemble by placing two stars together at slits.
