Ingredients

  • 6 boneless, skinless chicken breasts
  • 50 g (1 3/4 oz) butter, softened
  • 90 g (3 1/4 oz/1/4 cup) honey
  • 60 ml (2 fl oz/1/4 cup) barbecue sauce
  • 2 teaspoons wholegrain mustard

Method

1. Trim the chicken of any excess fat and sinew. Using a sharp knife, make three or four diagonal cuts across one side of each chicken breast. Preheat a barbecue grill or flatplate to high.

2. Combine the butter, honey, barbecue sauce and mustard in a small bowl. Spread half of the honey mixture thickly over the slashed side of the chicken. Cover with plastic wrap and stand at room temperature for 20 minutes. Set the remaining honey mixture aside.

3. Lightly grease the hot barbecue grill or flatplate. Cook the chicken breasts, slashed side up first, for 2-3 minutes each side, or until the chicken is cooked through and tender. Brush with the reserved honey mixture several times during cooking. Serve with a mixed salad.
