Ingredients

  • 1/2 pounds, 2-5/8 ounces, weight Flour, All Purpose
  • 1/2 ounces, weight Sugar
  • 1/4 ounces, weight Yeast, Active Dry
  • 1/4 ounces, weight Salt
  • 11 tablespoons, 2-1/2 teaspoons, 1/8 pinches Water
  • 1/2 ounces, weight Butter
  • 1 ounces, weight Candied Mixed Fruit

Method

  • In mixing bowl combine flour, sugar, yeast, and salt. Mix on low speed for one minute.
  • Add water and mix on low speed for one minute.
  • Then add butter and knead until smooth and elastic, about 10-15 minutes at medium speed.
  • Cover dough with towel and let it rise in a warm place until volume doubles in size.
  • Punch the dough down and roll out the dough to from a large rectangle 12x8 inch. Sprinkle the candied mixed fruit over the entire rectangle.
  • Roll up tightly, place it in a greased loaf pan, allow to rise for one hour.
  • Then bake at 200C degrees for 35 minutes.
