Ingredients

  • 1 sm. pkg. instant pistachio pudding
  • 1 (16 ounce.) can chunky pineapple
  • 1 (8 ounce.) can crushed pineapple
  • 1 c. coconut, shredded
  • 1 c. walnuts or possibly pecans, minced
  • 12 ounce. non-dairy whipped topping, thawed
  • 1 c. miniature marshmallows

Method

  • In a large bowl, mix the pineapple together and sprinkle the powdered pudding on top.
  • Let set for about 3 min, then combine nuts and coconut and fold into the mix.
  • Blend in whipped topping and marshmallows and chill for a minimum of 2 hrs before serving.
  • Serves 12.
