Ingredients
- 1 sm. pkg. instant pistachio pudding
- 1 (16 ounce.) can chunky pineapple
- 1 (8 ounce.) can crushed pineapple
- 1 c. coconut, shredded
- 1 c. walnuts or possibly pecans, minced
- 12 ounce. non-dairy whipped topping, thawed
- 1 c. miniature marshmallows
Method
- In a large bowl, mix the pineapple together and sprinkle the powdered pudding on top.
- Let set for about 3 min, then combine nuts and coconut and fold into the mix.
- Blend in whipped topping and marshmallows and chill for a minimum of 2 hrs before serving.
- Serves 12.
