Ingredients

  • 2 large eggs
  • 1 cup eggnog
  • 1/2 cup margarine melted
  • 2 teaspoons rum extract
  • 1 teaspoon vanilla extract
  • 2 1/4 cups flour, all-purpose
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg ground
  • 1/2 cup pecans chopped
  • 1/2 cup candied cherries red and green, chopped

Method

  • Preheat oven to 350F (180C).
  • Grease a 9x5-inch loaf pan.
  • In a large bowl, beat eggs.
  • Add sugar, eggnog, margarine, rum extract, and vanilla extract.
  • Blend well.
  • Stir in flour baking powder, salt, nutmeg, pecans, and red and green candied cherries.
  • Mix just until blended.
  • Pour into prepared loaf pan.
  • Bake for 45 to 50 minutes.
