Ingredients

  • 4 leftover baked or boiled potatoes
  • 4 Tbsp. butter, margarine or oil
  • 4 tsp. chopped onion
  • dash of salt
  • dash of pepper
  • 2 tsp. fresh herbs, minced (chives and/or thyme work well)

Method

  • Dice potatoes into 1/2-inch cubes or slice 1/4 inch thick. Saute potatoes over medium heat in butter, margarine or oil.
  • Add onion, salt and pepper to taste.
  • Saute potatoes until golden brown.
  • Add 2 teaspoons minced herbs, such as chives and/or thyme. Stir to coat potatoes with herbs and serve immediately.
