Ingredients
- 4 leftover baked or boiled potatoes
- 4 Tbsp. butter, margarine or oil
- 4 tsp. chopped onion
- dash of salt
- dash of pepper
- 2 tsp. fresh herbs, minced (chives and/or thyme work well)
Method
- Dice potatoes into 1/2-inch cubes or slice 1/4 inch thick. Saute potatoes over medium heat in butter, margarine or oil.
- Add onion, salt and pepper to taste.
- Saute potatoes until golden brown.
- Add 2 teaspoons minced herbs, such as chives and/or thyme. Stir to coat potatoes with herbs and serve immediately.
