Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 4 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ginger
  • nutmeg
  • cardamom
  • 14 teaspoon baking soda
  • 2 egg whites
  • 34 cup skim milk
  • 1 tablespoon oil
  • 12 cup canned pumpkin
  • 2 tablespoons brown sugar
  • 2 tablespoons oatmeal

Method

  • Preheat oven to 375F.
  • Spray 12-cup muffin pan with cooking spray.
  • Stir together flours, sugar, spices, baking powder and soda.
  • In a separate bowl stir together milk, egg white, oil, and pumpkin.
  • Add wet ingredients to dry and stir just until mixed.
  • Pour into muffin cups.
  • Stir together topping ingredients and sprinkle over muffins.
  • Bake 15-18 minutes.
