- 1 1/2 c. rolled oats
- 1/2 c. all-purpose flour
- 3 Tbsp. Oat Bran
- 1 tsp. ground cinnamon
- 1/4 tsp. salt (optional)
- 1/3 c. chopped dates
- 1 c. skim milk
- 2 slightly beaten egg whites
- 3/4 c. whole wheat flour
- 1/2 c. packed brown sugar
- 1/2 tsp. baking powder
- 3/4 tsp. baking soda
- 1/3 c. raisins
- 1/4 c. chopped nuts
- 1/4 c. cooking oil
Method
- In large bowl, combine oats, flours, brown sugar, Oat Bran, baking powder, cinnamon, baking soda and salt; mix well.
- Add raisins, dates and nuts.
- Stir to coat with flour mixture.
- Add milk, oil and egg whites; stir just until moistened (batter will be lumpy).
- Lightly grease 12 muffin cups.
- Spoon batter into cups, filling cups full.
- Bake at 400° for 18 to 20 minutes, or until done.
- Cool slightly; remove from pan.
