Ingredients

  • 1 1/2 c. rolled oats
  • 1/2 c. all-purpose flour
  • 3 Tbsp. Oat Bran
  • 1 tsp. ground cinnamon
  • 1/4 tsp. salt (optional)
  • 1/3 c. chopped dates
  • 1 c. skim milk
  • 2 slightly beaten egg whites
  • 3/4 c. whole wheat flour
  • 1/2 c. packed brown sugar
  • 1/2 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1/3 c. raisins
  • 1/4 c. chopped nuts
  • 1/4 c. cooking oil

Method

  • In large bowl, combine oats, flours, brown sugar, Oat Bran, baking powder, cinnamon, baking soda and salt; mix well.
  • Add raisins, dates and nuts.
  • Stir to coat with flour mixture.
  • Add milk, oil and egg whites; stir just until moistened (batter will be lumpy).
  • Lightly grease 12 muffin cups.
  • Spoon batter into cups, filling cups full.
  • Bake at 400° for 18 to 20 minutes, or until done.
  • Cool slightly; remove from pan.
