Ingredients

  • 1 1/2 lb. beef or chuck
  • 1 1/2 c. carrots, chopped
  • 1 c. celery, chopped
  • 2 c. hot water
  • 1 1/2 c. instant rice
  • 1 envelope onion soup mix
  • 1 bay leaf

Method

  • Crumble beef into a 3 to 5-quart microwave dish. Add carrots and celery. Cover and microwave on High for 4 to 6 1/2 minutes or until beef is set, stirring twice.
  • Add remaining ingredients. Microwave, covered, for 12 to 18 minutes until vegetables are tender, stirring twice. Remove bay leaf before serving.
