Ingredients
- 1 1/2 lb. beef or chuck
- 1 1/2 c. carrots, chopped
- 1 c. celery, chopped
- 2 c. hot water
- 1 1/2 c. instant rice
- 1 envelope onion soup mix
- 1 bay leaf
Method
- Crumble beef into a 3 to 5-quart microwave dish. Add carrots and celery. Cover and microwave on High for 4 to 6 1/2 minutes or until beef is set, stirring twice.
- Add remaining ingredients. Microwave, covered, for 12 to 18 minutes until vegetables are tender, stirring twice. Remove bay leaf before serving.
