Ingredients

  • 1 3/4 lb. center cut ham steak
  • 1 c. unsalted chicken stock
  • 3 green onions (tops only), chopped
  • 1/4 c. Port
  • 1 can sliced mushrooms or 1/4 lb. fresh mushrooms
  • 1 1/2 Tbsp. butter or margarine

Method

  • In a 12-inch skillet, melt butter over medium-high heat. Slice extra fat off ham.
  • Add ham steak and quickly brown on both sides.
  • Add Port and let bubble for a moment.
  • Add stock, mushrooms and green onions.
  • Simmer gently, basting ham with sauce until mushrooms are tender (about 5 minutes).
  • Remove ham and reduce sauce by half.
  • Add ham; heat 1 minute and serve.
  • Great with poached or scrambled eggs!
  • Serves 2 to 4.
