Ingredients
- 1 3/4 lb. center cut ham steak
- 1 c. unsalted chicken stock
- 3 green onions (tops only), chopped
- 1/4 c. Port
- 1 can sliced mushrooms or 1/4 lb. fresh mushrooms
- 1 1/2 Tbsp. butter or margarine
Method
- In a 12-inch skillet, melt butter over medium-high heat. Slice extra fat off ham.
- Add ham steak and quickly brown on both sides.
- Add Port and let bubble for a moment.
- Add stock, mushrooms and green onions.
- Simmer gently, basting ham with sauce until mushrooms are tender (about 5 minutes).
- Remove ham and reduce sauce by half.
- Add ham; heat 1 minute and serve.
- Great with poached or scrambled eggs!
- Serves 2 to 4.
