Ingredients
- 1 qt. chopped lean ham
- 1/2 c. vinegar
- 1/2 c. chili sauce
- 1/2 c. chopped pickles (sweet or sour)
- 1/4 c. pickle juice
- 2 Tbsp. horseradish
- 1 Tbsp. prepared mustard
- 1/4 tsp. black pepper
Method
- Combine all ingredients.
- If mixture is needed a little thinner for spread add meat stock.
- Pack in jar.
- Let 1 1/2 headspace. Process pint and 1/2 pint at 10 pounds pressure for 1 hour.
- After opening, mix with mayonnaise or sour cream and hard-boiled eggs.
