Ingredients
- 3 cups Cubed Sweet Potatoes, Skin On
- 1-1/2 cup Granny Smith Apples, Cut Into Large Pieces
- 1-1/2 cup Red Onion, Cut Into Large Pieces
- 1 Tablespoon Maple Syrup
- 2 teaspoons Pumpkin Pie Spice
- 1/2 cups Dried Cranberries
- 1/2 cups Chopped Walnuts
- 1-1/2 teaspoon Pink Himalayan Salt
- 1/4 cups Coconut Oil Plus A Bit Extra For Greasing Dish
Method
- Preheat oven to 425 F. Grease a 13x9 baking dish with coconut oil, just like you would for a cake. Mix together all of the ingredients in a large bowl, then transfer the mixture to your baking dish. Bake for about an hour, or until a fork pierces the potatoes easily. Check it after 45 minutes, because the time really depends on how small you chop the potatoes. Enjoy!
