Ingredients

  • 3 cups Cubed Sweet Potatoes, Skin On
  • 1-1/2 cup Granny Smith Apples, Cut Into Large Pieces
  • 1-1/2 cup Red Onion, Cut Into Large Pieces
  • 1 Tablespoon Maple Syrup
  • 2 teaspoons Pumpkin Pie Spice
  • 1/2 cups Dried Cranberries
  • 1/2 cups Chopped Walnuts
  • 1-1/2 teaspoon Pink Himalayan Salt
  • 1/4 cups Coconut Oil Plus A Bit Extra For Greasing Dish

Method

  • Preheat oven to 425 F. Grease a 13x9 baking dish with coconut oil, just like you would for a cake. Mix together all of the ingredients in a large bowl, then transfer the mixture to your baking dish. Bake for about an hour, or until a fork pierces the potatoes easily. Check it after 45 minutes, because the time really depends on how small you chop the potatoes. Enjoy!
