Ingredients

  • 2 cloves of garlic chopped
  • 2-3 Tbls of fresh squeezed lemon juice
  • 2-3 Tbls olive oil plus more for grilling zucchini
  • 3 Tbls fresh chopped herbs such as basil, parsley or marjoram
  • 3 Tbls grated Parmesan or Pecorino Romano.
  • Red pepper flakes and salt to taste
  • 1 Large zucchini sliced into about 1/4 inch rounds

Method

  • Pre-heat your grill
  • Make salad dressing by whisking together the first 6 ingredients
  • Toss the zucchini slices with olive oil. Grill the zucchini slices on high heat till they are softened and have some nice grill marks.
  • Toss hot zucchini with dressing and serve.
