Ingredients
- 2 cloves of garlic chopped
- 2-3 Tbls of fresh squeezed lemon juice
- 2-3 Tbls olive oil plus more for grilling zucchini
- 3 Tbls fresh chopped herbs such as basil, parsley or marjoram
- 3 Tbls grated Parmesan or Pecorino Romano.
- Red pepper flakes and salt to taste
- 1 Large zucchini sliced into about 1/4 inch rounds
Method
- Pre-heat your grill
- Make salad dressing by whisking together the first 6 ingredients
- Toss the zucchini slices with olive oil. Grill the zucchini slices on high heat till they are softened and have some nice grill marks.
- Toss hot zucchini with dressing and serve.
