Ingredients
- 6 or 8 salmon steaks
- 1 c. olive oil
- 2 Tbsp. soy sauce
- 1/4 c. chopped shallots
- 1 tsp. grated lemon rind
- freshly ground pepper
Method
- Combine ingredients in a small bowl and mix well.
- Arrange salmon steaks (or whole salmon) in glass baking dish.
- Pour marinade over salmon and cover for 3 hours or longer.
- Turn several times.
- Wrap in heavy foil and grill (medium to low) for 8 to 10 minutes on each side.
- Serve with mustard sauce:
- 1/2 cup mayonnaise, 1/2 cup mustard and 2 teaspoons horseradish (or to taste).
