Ingredients

  • 6 or 8 salmon steaks
  • 1 c. olive oil
  • 2 Tbsp. soy sauce
  • 1/4 c. chopped shallots
  • 1 tsp. grated lemon rind
  • freshly ground pepper

Method

  • Combine ingredients in a small bowl and mix well.
  • Arrange salmon steaks (or whole salmon) in glass baking dish.
  • Pour marinade over salmon and cover for 3 hours or longer.
  • Turn several times.
  • Wrap in heavy foil and grill (medium to low) for 8 to 10 minutes on each side.
  • Serve with mustard sauce:
  • 1/2 cup mayonnaise, 1/2 cup mustard and 2 teaspoons horseradish (or to taste).
