Ingredients

  • 2 tablespoons butter or margarine
  • 3 cups sliced red onions
  • 2 tablespoons red wine vinegar
  • 1 cup dry red wine
  • 2 whole cloves
  • 1 bay leaf
  • 4 tablespoons honey
  • salt and fresh ground pepper to taste
  • 3 tablespoons olive oil
  • 1 1/2 cups diced fresh red tomatoes core removed, cut into 1/4 inch cubes
  • 1 tablespoon finely chopped garlic
  • 2 springs fresh thyme or 1/2 teaspoon dried
  • 1/4 teaspoon red pepper flakes
  • 4 boneless salmon fillets with skin about 6 ounces each
  • basil leaves or parsley for garnish
