- 3 cups sliced red onions
- 2 tablespoons red wine vinegar
- 1 cup dry red wine
- 2 whole cloves
- 1 bay leaf
- 4 tablespoons honey
- salt and fresh ground pepper to taste
- 3 tablespoons olive oil
- 1 1/2 cups diced fresh red tomatoes core removed, cut into 1/4 inch cubes
- 1 tablespoon finely chopped garlic
- 2 springs fresh thyme or 1/2 teaspoon dried
- 1/4 teaspoon red pepper flakes
- 4 boneless salmon fillets with skin about 6 ounces each
- basil leaves or parsley for garnish
