Ingredients

  • 150 ml Vegetable oil
  • 1 tbsp Butter
  • 1/2 Onion
  • 1 Salt & Pepper
  • 150 ml Sherry wine
  • 1 tbsp Fresh thyme
  • 2 slice Sourdough bread
  • 1 slice Gruyere cheese
  • 1 tbsp Caramelized onion
  • 1 Butter

Method

  • Pour into a pot the vegetable oil and the butter.
  • Cut the onion into wide half-moon slices and put it into the pot.
  • Add salt & pepper.
  • Cook them slowly and move the content constantly.
  • Once caramelized, add the Sherry wine and the thyme finely chopped.
  • Move the content until the wine redeces.
  • Place a thick slice of gruyere cheese and a spoonful of caramelized onions between two slices of bread and butter the outsides.
  • Place on the griddle and cover with a metal bowl.
  • Turn the sandwich and cover it again.
  • Once the cheese is melted, remover from the griddle and serve.
