Ingredients

  • 6 ears corn
  • 3 tbsp butter
  • 1 clove garlic, crushed
  • 1 None lime, peel grated
  • 2 tsp sea salt
  • 2 tbsp finely chopped cilantro
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika (optional)
  • None None Lime wedges, for serving

Method

  • Preheat the grill to medium. Remove the husks and silks from the corn. Plunge the corn into a saucepan of gently boiling water and cook for 5-6 mins. Drain.
  • Melt the butter in a large, shallow dish. Add the garlic, lime peel, sea salt, cilantro and cumin. Roll the corn in the seasoned butter.
  • Grill the corn until slightly charred. Dust the cobs with smoked paprika, if desired, and serve with lime wedges.
