Ingredients
- 6 ears corn
- 3 tbsp butter
- 1 clove garlic, crushed
- 1 None lime, peel grated
- 2 tsp sea salt
- 2 tbsp finely chopped cilantro
- 1 tsp ground cumin
- 1/2 tsp smoked paprika (optional)
- None None Lime wedges, for serving
Method
- Preheat the grill to medium. Remove the husks and silks from the corn. Plunge the corn into a saucepan of gently boiling water and cook for 5-6 mins. Drain.
- Melt the butter in a large, shallow dish. Add the garlic, lime peel, sea salt, cilantro and cumin. Roll the corn in the seasoned butter.
- Grill the corn until slightly charred. Dust the cobs with smoked paprika, if desired, and serve with lime wedges.
