Ingredients

  • 1 12 lbs bone in chicken thighs, skinned
  • 4 garlic cloves, crushed and minced
  • 2 teaspoons fish, sauce. 1 teaspoon and cut your sodium in half
  • 2 tablespoons molasses
  • 2 -3 tablespoons lime juice (1 good size lime)
  • 1 tablespoon dark sesame oil
  • 2 teaspoons black pepper
  • 1 pinch red pepper flakes

Method

  • Place all ingredients in a glass baking dish except the chicken and stir to mix.
  • Make like slits in the chicken thighs.
  • Put thighs in marinate making sure they are well basted getting marinate in the slits.
  • Marinate 15 minutes while grill is heating up.
  • Place on hot grill and cook to a slight char on both sides.
  • Turn only once.
  • Finish cooking on foil to prevent over charring.
  • These stay so moist, don't worry about over cooking.
  • They will not dry out.
  • Pair with curry rice and cucumber slices.
