Ingredients
- 1 c. plus 2 Tbsp. unsifted all-purpose flour
- 1 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1 Tbsp. sugar
- 1 egg, beaten
- 1 c. milk
- 3 Tbsp. shortening, melted
Method
- Mix flour, baking powder, salt and sugar.
- Combine egg and milk; add to flour mixture, along with shortening, mixing just until flour is dampened.
- Add milk as desired for thinner cakes (batter will be lumpy).
- Cook on hot greased griddle.
- Yields 10 to 12 cakes.
