Ingredients
- 12 1/2 lb. green tomatoes
- 3 large onions
- 10 green peppers
- 3 Tbsp. salt
- 1 qt. vinegar
- 1/4 tsp. cloves
- 3 Tbsp. mustard
- 1 Tbsp. cinnamon
- 1 Tbsp. allspice
- 1/2 c. horseradish
- 1 3/4 c. sugar
Method
- Wash vegetables; drain and chop.
- Place in large container. Sprinkle with salt.
- Cover with weighted plate.
- Let stand overnight.
- Drain.
- Add vinegar, mustard, spices (which have been tied in cheesecloth bag), sugar and horseradish.
- Simmer about 15 minutes or until vegetables are tender.
- Pack in hot sterilized jars.
- Seal.
