Ingredients

  • 12 1/2 lb. green tomatoes
  • 3 large onions
  • 10 green peppers
  • 3 Tbsp. salt
  • 1 qt. vinegar
  • 1/4 tsp. cloves
  • 3 Tbsp. mustard
  • 1 Tbsp. cinnamon
  • 1 Tbsp. allspice
  • 1/2 c. horseradish
  • 1 3/4 c. sugar

Method

  • Wash vegetables; drain and chop.
  • Place in large container. Sprinkle with salt.
  • Cover with weighted plate.
  • Let stand overnight.
  • Drain.
  • Add vinegar, mustard, spices (which have been tied in cheesecloth bag), sugar and horseradish.
  • Simmer about 15 minutes or until vegetables are tender.
  • Pack in hot sterilized jars.
  • Seal.
