Ingredients
- 1 peck (12 lb.) green tomatoes
- 8 onions
- 10 bell peppers
- 3 Tbsp. salt
- 6 hot peppers, chopped
- 1 qt. vinegar
- 1 Tbsp. cinnamon
- 1 Tbsp. allspice
- 1/4 tsp. cloves
- 3 Tbsp. dry mustard
- 1 3/4 c. sugar
Method
- Chop tomatoes, onions and peppers together. Cover with salt and allow to stand overnight.
- Drain.
- Add hot peppers, vinegar, spices (tied in cheesecloth) and sugar.
- Boil until tender (approximately 15 minutes).
- Pack in pint jars.
- Process in boiling water for 10 minutes.
