Ingredients

  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp mirin
  • 1 clove garlic, crushed
  • 1 tsp sugar
  • 1 slice (1/4-inch) ginger, grated
  • 2 tsp olive oil
  • 1/2 tsp sesame oil
  • 6 oz asparagus, woody ends snapped off
  • 4 oz snow peas
  • 1 small cucumber, halved lengthwise, seeded and thinly sliced
  • 1 None avocado, peeled, pitted and diced
  • 4 oz mixed salad greens

Method

  • Whisk soy sauce, vinegar, mirin, garlic, sugar, ginger and oils in a small bowl. Let stand for 15 mins.
  • Meanwhile, boil, steam or microwave asparagus and snow peas separately until just tender, drain and refresh with cold water. Cut asparagus into chunks.
  • Place asparagus, snow peas, cucumber, avocado and salad greens in a large bowl. Drizzle with dressing; toss gently to combine.
