- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp mirin
- 1 clove garlic, crushed
- 1 tsp sugar
- 1 slice (1/4-inch) ginger, grated
- 2 tsp olive oil
- 1/2 tsp sesame oil
- 6 oz asparagus, woody ends snapped off
- 4 oz snow peas
- 1 small cucumber, halved lengthwise, seeded and thinly sliced
- 1 None avocado, peeled, pitted and diced
- 4 oz mixed salad greens
Method
- Whisk soy sauce, vinegar, mirin, garlic, sugar, ginger and oils in a small bowl. Let stand for 15 mins.
- Meanwhile, boil, steam or microwave asparagus and snow peas separately until just tender, drain and refresh with cold water. Cut asparagus into chunks.
- Place asparagus, snow peas, cucumber, avocado and salad greens in a large bowl. Drizzle with dressing; toss gently to combine.
