Ingredients

  • 1 1/2 c. long grain rice
  • 3 c. water
  • 1 tsp. salt
  • 1 (10 oz.) pkg. frozen chopped spinach
  • 1/8 c. chopped green onion
  • 1/2 c. Parmesan cheese
  • salt and pepper
  • 1 tsp. oregano
  • 1 tsp. thyme
  • 1/3 c. butter, melted
  • 2 eggs, beaten
  • 1 c. milk
  • 2 Tbsp. butter

Method

  • Cook rice in 3 cups water and salt for 20 minutes.
  • Add cooked and drained spinach, onion, 1/3 cup cheese, salt and pepper.
  • Stir in herbs and melted butter.
  • Put mixture in casserole dish and add eggs beaten with milk.
  • Sprinkle with remaining cheese, dot with butter and bake 1 1/4 hours.
