Ingredients
- 1 pound green beans
- 24 baby carrots, halved lengthwise
- 2 oz. pine nuts
- 2 Tbsp. olive oil
- 6 oz. Shiitake Mushrooms, sliced
- 3 plum tomatoes, peeled, seeded, sliced thin
- 1-1/2 Tbsp. lemon juice - fresh
- salt and pepper, to taste
Method
- Bring large pot of salted water to a boil. Add the green beans and carrots and cook until crisp-tender, about 5 minutes. Drain and pat dry with paper towels.
