Ingredients
- 6 to 7 white baking potatoes, peeled and quartered
- 1/2 green pepper, cut in large pieces
- 1 medium onion, cut in large pieces
- 4 Tbsp. water
- 1 large clove garlic, minced
- 1 stick butter, cut in pieces
- salt and pepper to taste
- 1 tsp. crushed dried rosemary
- 1/2 tsp. paprika (optional)
Method
- Arrange all the ingredients in a 9 x 13-inch pan and sprinkle with salt, pepper, rosemary and paprika.
- Put in oven and stir vegetables as soon as the butter melts.
- Stir and baste occasionally as potatoes bake. Bake 1 hour until potatoes are cooked through and golden brown at 375°.
- Serves 6.
