Ingredients

  • 6 to 7 white baking potatoes, peeled and quartered
  • 1/2 green pepper, cut in large pieces
  • 1 medium onion, cut in large pieces
  • 4 Tbsp. water
  • 1 large clove garlic, minced
  • 1 stick butter, cut in pieces
  • salt and pepper to taste
  • 1 tsp. crushed dried rosemary
  • 1/2 tsp. paprika (optional)

Method

  • Arrange all the ingredients in a 9 x 13-inch pan and sprinkle with salt, pepper, rosemary and paprika.
  • Put in oven and stir vegetables as soon as the butter melts.
  • Stir and baste occasionally as potatoes bake. Bake 1 hour until potatoes are cooked through and golden brown at 375°.
  • Serves 6.
