Ingredients

  • 2 teaspoons oil
  • 1 onion, diced
  • 250g beef mince Safeway 1 lb For $5.99 thru 02/09
  • 3 tablespoon tomato paste
  • 250g spinach, defrosted and squeezed to remove excess juice
  • 1/2 teaspoon oregano
  • 1/2 cup toasted pinenuts
  • 2 sheets puff pastry
  • 125g block PHILADELPHIA Cream Cheese, softened and cut into chunks

Method

  • Heat oil in a large frypan, add sliced onion and saute until translucent.
  • Add mince to the pan and cook until evenly browned.
  • Stir through tomato paste, spinach, oregano and pinenuts and cook for 2 minutes.
  • Spread half the filling evenly over each sheet leaving a 2cm border at the right hand edge.
  • Place Philly* chunks over meat on the left hand side and roll up like a swiss roll towards the right hand side.
  • Cut each log into 3cm slices and place on a lined baking tray.
  • Bake at 200C for 20 minutes or until the pastry is golden brown.
  • Serve warm or cold.
