Ingredients

  • 4 firm ripe tomatoes, coarsely chopped
  • 3 cucumbers, seeded and sliced
  • 1 green bell pepper
  • 1 red onion-sliced into rings
  • 1/2 cup extra virgin olive oil
  • 1 cup black olives, pitted and sliced
  • 1 lemon
  • 1/4 teaspoon sea salt
  • 3 teaspoons fresh minced garlic
  • 2-4 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon freshly ground black pepper
  • 250g feta cheese-cut into small cubes

Method

  • PLACE the olive oil, lemon juice, garlic, salt, pepper and oregano in a small jar with a screw-top lid and shake to combine. PLACE the salad ingredients in a large bowl. POUR the dressing over the salad and toss gently to combine just before serving. Garnish the Greek salad with a little freshly ground black pepper.
