Ingredients

  • 4 plum tomatoes, seeded and diced
  • 1/2 red onion, chopped
  • 1/2 seedless European cucumber, diced
  • 1/4 c. chopped fresh flat leaf parsley
  • 1/2 c. pitted Kalamata black olives, chopped
  • 1/2 lb. feta cheese, crumbled
  • 4 pepperoncini hot peppers, chopped
  • Salt and pepper to taste
  • 1 c. plain Dannon yogurt
  • 1 tsp. dry oregano leaves
  • 1 tsp. ground cumin
  • 1 Tbsp. lemon juice
  • 2 Tbsp. red wine vinegar
  • Warm pita breads (optional)

Method

  • Combine first 7 ingredients in a bowl.
  • Season with salt and pepper.
  • Combine yogurt with lemon juice, red wine vinegar, oregano and ground cumin.
  • Mix thoroughly.
  • Add dressing to salad and toss.
  • Adjust seasoning.
  • Eat salad as is or piled in warm pita breads.
