Ingredients

  • 1 pound dry white beans
  • 1 large onion,diced
  • 8 medium plum tomatoes,peeled and diced
  • 2 clove garlic clove,minced
  • 2 leaf bay leaf
  • 5 cup water
  • 2 cup fat-free chicken broth
  • 1/4 cup olive oil
  • 2 inch piece of orange rind
  • salt and freshly ground pepper

Method

  • Drain and rinse beans that have been soaking overnight. Place in a pot cover with water and simmer till tender. Drain and set aside. Add olive oil in pot, saute diced onion 2 minutes add minced garlic saute 1 minute. Add diced tomatoes and chicken broth,and the beans stir, bring to boil then simmer till beans are very soft,add water if needed. Salt and pepper to taste.
