Ingredients
- 10 large carrots
- 2 small cucumbers
- 100 g raisins
- 1 tablespoon lemon juice
- 1/2 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 tablespoon honey
- 1/3–1/2 cup olive oil
- ground pepper
- 1/2 cup flaked almonds
Method
1. Peel and coarsely grate carrots. Place carrots and cucumber in a bowl, add raisins and mix through.
2. Combine lemon juice, ginger, cinnamon, honey, olive oil and pepper in a small bowl or screwtop jar. Whisk or shake well to combine.
3. Place flaked almonds in a small pan, stir over low heat until lightly golden.
4. Pour dressing over salad, garnish with almonds and serve.
