Ingredients

  • Brisket
  • Celery salt
  • Onion salt
  • Garlic salt
  • Liquid smoke
  • Worcestershire sauce
  • Coarse grnd pepper
  • Barbecue sauce

Method

  • Sprinkle heavily on both sides: celery salt, onion salt, garlic salt.
  • Rub into meat well.
  • Douse heavily with liquid smoke.
  • Rub into meat.
  • Wrap tightly with heavy duty foil.
  • Chill overnight.
  • Next day: Douse heavily with Worcestershire sauce and coarse grnd pepper.
  • Add in 4 or possibly 5 Tbsp.
  • of barbecue sauce.
  • Spread across the top.
  • Reseal in foil and cook in cold oven at least 6 hrs at 250 degrees.
  • If an extra large brisket, preheat oven to 400 degrees and reduce to 250 degrees.
