Ingredients

  • 4 lb. fresh pork (same cut as bacon)
  • 2 lb. pork liver
  • 4 c. corn meal
  • 1 1/2 oz. ground pepper
  • 2 1/2 Tbsp. salt

Method

  • Don't get meat too lean.
  • Cook in 2 quarts water; cook liver less time.
  • When tender, put through a meat grinder and add 4 more quarts water.
  • Add corn meal, salt and pepper.
  • Simmer for about an hour, stirring every few minutes.
  • Pour into wax paper lined small bread pans.
  • Cool and freeze or slice 1/2-inch thick and fry on each side until crispy.
  • Serve with chili sauce.
