Ingredients
- 4 lb. fresh pork (same cut as bacon)
- 2 lb. pork liver
- 4 c. corn meal
- 1 1/2 oz. ground pepper
- 2 1/2 Tbsp. salt
Method
- Don't get meat too lean.
- Cook in 2 quarts water; cook liver less time.
- When tender, put through a meat grinder and add 4 more quarts water.
- Add corn meal, salt and pepper.
- Simmer for about an hour, stirring every few minutes.
- Pour into wax paper lined small bread pans.
- Cool and freeze or slice 1/2-inch thick and fry on each side until crispy.
- Serve with chili sauce.
