Ingredients

  • 1 lb. sweet Italian sausage
  • 1 c. chopped celery
  • 1 medium onion, chopped
  • 1 garlic clove, chopped
  • 6 to 8 slices cubed bread
  • 4 eggs
  • 1/2 c. grated Italian cheeses
  • 1 Tbsp. butter or oil
  • poultry seasoning
  • salt and pepper

Method

  • Remove sausage from casing and fry in butter or oil.
  • Add celery, onion and garlic to sausage; cook approximately 1/2 hour. Beat eggs and cheese together.
  • Add salt and pepper to taste. Stir egg mix to sausage mix and cook until eggs solidify.
  • If too dry, add 1/2 cup chicken broth.
  • If too wet, add bread crumbs or more bread cubes.
