Ingredients
- 1 lb. sweet Italian sausage
- 1 c. chopped celery
- 1 medium onion, chopped
- 1 garlic clove, chopped
- 6 to 8 slices cubed bread
- 4 eggs
- 1/2 c. grated Italian cheeses
- 1 Tbsp. butter or oil
- poultry seasoning
- salt and pepper
Method
- Remove sausage from casing and fry in butter or oil.
- Add celery, onion and garlic to sausage; cook approximately 1/2 hour. Beat eggs and cheese together.
- Add salt and pepper to taste. Stir egg mix to sausage mix and cook until eggs solidify.
- If too dry, add 1/2 cup chicken broth.
- If too wet, add bread crumbs or more bread cubes.
