Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups sugar
  • 12 cup oil (was 1 1/2 cups)
  • 1 cup unsweetened applesauce
  • 4 eggs (at room temperature)
  • 12 cup walnuts, crushed
  • 3 cups carrots, shredded
  • 1 cup pineapple, minced (optional)
  • 2 teaspoons vanilla extract

Method

  • Sift the flour, baking powder, baking soda, salt, and sugar.
  • Beat the egg.
  • Mix the dry ingredients, beaten egg, oil, apple sauce, carrot, pineapple, walnuts, and vanilla.
  • Pour the mix in a bundt cake pan (dont need to oil the pan).
  • Preheat the oven to 375 degree, and bake for 1 hour.
