Ingredients
- sherry or sweet wine
- salt and pepper
- favorite dressing
- orange marmalade
- butter or oleo, melted
- maple syrup
- Kitchen Bouquet
Method
- Soak large duck 4 hours in sherry or other sweet wine.
- Season inside of duck with salt and pepper.
- Stuff loosely with favorite dressing.
- Salt and pepper outside of duck.
- Place each duck on double thickness of foil.
- Spread generous amount of orange marmalade on each duck and wrap tight in foil.
- Cook on open baking sheets at 325° for 3 hours.
- Turn back foil and brush with mixture of butter, syrup and Kitchen Bouquet.
- Return to oven with foil turned back.
- Bake 30 more minutes or until browned.
