Ingredients

  • sherry or sweet wine
  • salt and pepper
  • favorite dressing
  • orange marmalade
  • butter or oleo, melted
  • maple syrup
  • Kitchen Bouquet

Method

  • Soak large duck 4 hours in sherry or other sweet wine.
  • Season inside of duck with salt and pepper.
  • Stuff loosely with favorite dressing.
  • Salt and pepper outside of duck.
  • Place each duck on double thickness of foil.
  • Spread generous amount of orange marmalade on each duck and wrap tight in foil.
  • Cook on open baking sheets at 325° for 3 hours.
  • Turn back foil and brush with mixture of butter, syrup and Kitchen Bouquet.
  • Return to oven with foil turned back.
  • Bake 30 more minutes or until browned.
