Ingredients
- 2 (1 lb.) cans sliced peaches
- 1/2 c. sugar
- 2 Tbsp. flour
- 1/4 tsp. nutmeg
- 2 Tbsp. butter
- 1 Tbsp. lemon juice
- 1/8 tsp. almond extract
- pastry crust for 2-crust pie
Method
- Drain peaches reserving 1/3 cup syrup.
- Combine sugar, flour, nutmeg and dash of salt.
- Add syrup.
- Cook stirring until thick and bubbly.
- Add butter, lemon juice and extract, then peaches.
- Line a 9-inch pie plate with pastry.
- Fill.
- Adjust top crust, cutting slits for steam.
- Top with 1/2 teaspoon sugar, 1/4 teaspoon cinnamon and dabs of butter; seal.
- Bake at 400° for 40 to 45 minutes.
