Ingredients

  • 2 (1 lb.) cans sliced peaches
  • 1/2 c. sugar
  • 2 Tbsp. flour
  • 1/4 tsp. nutmeg
  • 2 Tbsp. butter
  • 1 Tbsp. lemon juice
  • 1/8 tsp. almond extract
  • pastry crust for 2-crust pie

Method

  • Drain peaches reserving 1/3 cup syrup.
  • Combine sugar, flour, nutmeg and dash of salt.
  • Add syrup.
  • Cook stirring until thick and bubbly.
  • Add butter, lemon juice and extract, then peaches.
  • Line a 9-inch pie plate with pastry.
  • Fill.
  • Adjust top crust, cutting slits for steam.
  • Top with 1/2 teaspoon sugar, 1/4 teaspoon cinnamon and dabs of butter; seal.
  • Bake at 400° for 40 to 45 minutes.
