Ingredients

  • 6 large potatoes
  • 1/4 c. sifted flour
  • 1/4 c. Parmesan cheese
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 c. butter
  • chopped parsley

Method

  • Peel potatoes and cut into quarters.
  • Combine flour, cheese, salt, and pepper.
  • Moisten potatoes with water and roll in the mixture, coating them well.
  • Melt butter in a 13 x 9-inch baking pan.
  • Bake at 375° for one hour.
  • Turn once during baking.
  • When golden brown, sprinkle with parsley.
  • Makes 6-8 servings.
